A specter is haunting our communications: the specter of emoji. Right now, it’s likely that someone you know is texting a thumbs-up image to confirm a meeting, or maybe sending off a friendly ghost emoji to say “boo” to a friend. Yet the little guys (and gals, and farm animals, and foodstuffs) aren’t without controversy. Word-centric fuddy-duddies see the decline of literacy reflected in their heart-shaped eyes, while guardians of decorum lament the sp of greasy kid stuff dripping from the characters’ snail trails. Given their resemblance to the stickers that adorn the notebooks of schoolgirls, not to mention their widesp adoption as the lingua franca of tweens and teens everywhere, some people wonder whether grown men should be using them at all. John McWhorter, a linguist who teaches at Columbia University, said that some men shy away from emoji because, as he put it, “Women use them more.” That may not continue to be the case, he added. “Women tend to be more overtly expressive in language,” he said. “But something women start in language has a way of making it to men. Men would benefit from using emoji more.”“女性在语言表达方面往往有着压倒性的优势,”他说。 Emoji, he said, allow for an expressive, human way of translating the spoken word into text, with the goofy symbols providing a texter or tweeter with the means to convey tone. “There should be male ways to use emoji,” he added. While Mr. McWhorter, 49, does not use emoji himself, citing his age, he is an admirer . “I’m not known as the most progressive person in the world, but in some ways I like them,” he said. “I’m a big fan.” Other experts (that is, emoji users themselves) are less definitive. “It’s a fine line,” said Melissa Karlin, 35, a Chicago-based accounts manager for Kenshoo, a software company. “Emoji-ing is a dance.” She noted that some men use emoji in ways she finds inscrutable, particularly in the context of romance, when they are given to texting the symbol of the winky face with the tongue sticking out. “I don’t know what it means,” Ms. Karlin said. She offered a piece of advice for potential suitors: “Use your words. I’m a big fan of using your words.” In a discussion that appeared last year on Yahoo Answers, one anonymous poster said of emoji: “They’re fun but I just find them emasculating!” In a spirited th on the same topic over on Reddit, another emoji user counseled, “Like anything else, moderation is key.” And yet many men find themselves grasping for emoji where words either fail them or come up short (prawn, perhaps). The tennis star Roger Federer sprinkles his tweets with them, and Mike Scott, a 6-foot-8 forward with the Atlanta Hawks, has several emoji tattoos, including the pair of dancing girls with bunny ears. The rapper Drake blew up the Internet last fall when a photograph of a praying-hands emoji tattoo, inked onto his right forearm, surfaced on Instagram. Jordan Peele, of the sketch comedy duo Key amp; Peele, proved his fluency when he retold the story of “The Shining” through 96 carefully selected emoji packed into a single tweet, an effort that has won him more than 13,000 retweets. Certain men embrace emoji while holding them at a remove. Gil Schwartz, a CBS executive who writes under the name Stanley Bing, called himself a “rare user of ironic emojis.” He said he is partial to the pig and the horse. “I use them because I think they’re stupid,” he said. “At some point, texting is kind of stupid.” He has no fear that using them may somehow put a dent in his masculinity. “For a moment you’re Taylor Swift,” said Mr. Schwartz, who is 63. “If you’re confident in your manhood, you can certainly lapse into Taylor Swift-hood momentarily.” Amina Akhtar, the editorial director of TheFashionSpot, a website, isn’t buying it. “If I’m seeing a guy, and he emojis, I feel uncomfortable,” said Ms. Akhtar, 37. “We’re too old to be doing this. To have a man in his 40s and 50s using emojis is uncomfortable to me.”TheFashionSpot网站的主编阿米娜·阿赫塔尔(Amina Akhtar)显然不接受这套说辞。 Katey Nilan, a 29-year-old writer and tech consultant in San Francisco, said: “If Drake can emoji, anyone can emoji. He’s pretty hard.” She added that, while she is pro emoji , there are limits . Like Ms. Karlin, she finds the winky face tongue-wagging emoji troublesome, especially when it is sent by men trying to flirt. “It seems like that’s the go-to if a guy can’t come up with something else to say,” Ms. Nilan said.29岁的卡蒂·尼兰(Katey Nilan)现居旧金山,是作家兼技术顾问,她表示:“如果德雷克都能用emoji表情符的话,那谁都可以用。 What does she do after she receives that one? Meaning, she replies with the ghost emoji?意思是,回一个鬼魂的emoji表情符?“No, no, no,” she said. “Ghosting is when you stop texting.”“不不不,”她说。 Stephen Lynch, a 33-year-old public relations professional in San Francisco, holds that emoji are neither good nor bad in themselves. “People can be as creepy using emoji as anything else,” he said. “Some people have troubled communication no matter what.” To him, furthermore, the question of whether grown men should use emoji is loaded. “The whole ‘should’ reeks of an old-fashioned and hetero-normative view of the world,” he said. “Second thing is, why wouldn’t they reciprocate?” “另外一点是,他们为什么就不能用相同方式回复别人呢?”In other words, if someone sends you an emoji, why not reply in kind? “Why wouldn’t you engage in the same way someone is engaging you?” Mr. Lynch said. Bruce Feirstein, a screenwriter and journalist living in Los Angeles, seems to agree: “When my 14-year-old son sends me the face palm emoji, I laugh. I immediately respond. But that’s a conversation with my 14-year-old son.” His business correspondence, on the other hand, has a tone that doesn’t allow for a smiley face, or even the mustache man. “It’s all about context,” he said. “I’ve never gotten a serious piece of communication or a message from an adult with an emoji.” Mr. Feirstein, 61, is something of an authority on the subject of what men should or should not do, having written the 1982 best seller “Real Men Don’t Eat Quiche,” a satirical “Guidebook to All That Is Truly Masculine,” as the subtitle put it.61岁的费尔斯坦堪称男人该做什么不该做什么这方面的权威,他著有《真男人不吃蛋饼》(Real Men Don’t eat Quiche)一书,1982年成了畅销书。 (Guidebook to All That Is Truly Masculine)”。“When I wrote the book, things were simpler than they are now,” he said. “I don’t know if, in the year 2015, defining what a ‘real man’ would do or not do is relevant, because the culture has changed. I don’t know if you can make these grand pronouncements anymore.”“我写书的时候,事情比现在简单不少,”他说。 Besides, grand pronouncements are likely to have no effect on how language is changing in the digital sphere. “I say it’s like a new form of communication,” said Adrian Rodriguez, a 26-year-old office manager in San Francisco. “It’s just the way things are evolving. It’s just there. You don’t want to overthink it.” /201505/374891Daniel Burns talks about beer with the zeal of the recently converted. “There’s such a spectrum of flavour,” he says. “With beer, you can add whatever you think might work, you can play around. Wine is so dependent on terroir.” Burns is not a brewer but a chef: co-owner of Luksus in New York, the first beer-only restaurant to win a Michelin star. It’s unlikely to be the last. From the southern Indian restaurant Quilon in London, where beers begin the drinks list, to Eleven Madison Park in Manhattan, where the choices run to eight pages, beer has been invited to join the fine dining club. Luksus, a joint venture between Burns and brewer Jeppe Jarnit-Bjergso, is found at the back of their bar Torst, a white-marble beer paradise in Greenpoint, Brooklyn, with 21 beers on tap. Though neighbour to takeaway joints and street-corner grocery stores, both Torst and Luksus are designed along clean Scandinavian lines (Luksus means “luxury” in Danish).Luksus是由伯恩斯与酿酒师Jeppe Jarnit-Bjergso创办的合资餐馆,就设在Torst酒吧后面,Torst这座“啤酒乐园”位于布鲁克林绿点区(Greenpoint, Brooklyn)的一幢由白色大理石建筑内,有21种啤酒随时可供饮用。 The 26-seat restaurant serves a delicate tasting (), which includes dishes such as cured mackerel, pickled radish and dill or parsnip parfait with malt and cranberry. Its beer matches () are extraordinary, too, including Saison Cazeau, a spicy, elderflower-infused Belgian ale and Off Color Brewing’s Scurry, a dark honey ale made using oats. Wine is not on the . “We do a salted plum purée, which we’ve used with both duck and squab,” says the softly-spoken Burns, a Canadian who has worked at The Fat Duck, Noma and St John. “[To match] there’s a sour beer which has been aged in wine barrels with plums, made by [the Italian brewery] LoverBeer, that works perfectly.”“我们使用鸭肉乳鸽,精心制作了咸味李子泥,”说话细声细语的伯恩斯说,伯恩斯是加拿大人,曾先后在The Fat Duck、Noma以及St John工作过。 Even in Paris, where wine is king, restaurants have started to incorporate beer into their offering, most notably at hip bar-bistro Bones in the 11th arrondissement, which champions French breweries such as Craig Allan and Deck amp; Donohue. La Fine Mousse, a beer-matching bar-restaurant, opened last summer in the same neighbourhood. Romain Thieffry, one of the four co-owners, says: “It’s still difficult to make people come [here]#8201;.#8201;.#8201;.#8201;They are reluctant to try [beer with food] because they don’t know it.” Cheese is part of Thieffry’s strategy. “In France, we are programmed to think cheese goes with wine,” he says. “But in fact it’s difficult to make a pairing, especially with red wine. For cheese, the range of qualities that meet very well with beer are huge; it’s easy to make at least a correct pairing and it’s easier [than wine] to have a great one.” Such pairings might include Comté with the strong, sweet Brasserie Saint Rieul Grand Cru, or a smoked goat’s cheese with La Tourbée, a peated dark ale made by Brasserie du Mont Salève. Suspicion of beer in the food world, Burns says, does not only relate to the diners. “I did this chef congress in New York, and one of the guys asked me: ‘Do you worry about people not coming because there’s no wine?’ It made me think — before you go to the Fat Duck or Hibiscus, do you think about what wine you’re going to drink? I get excited about the food, and the beverage is secondary. If it hinders people, that’s very short-sighted.” The energy of the brewing revolution may be enough to blow away any remaining doubts. Sriram Aylur, chef at Quilon, certainly thinks so. “When we see new trends, new brewers, we always want to work with them, especially if they’re doing something interesting,” he says. He highlights London breweries such as The Kernel, whose aromatic, low-alcohol Table Beer is on Quilon’s . “We’re very open, we’re not boxed in, we can change.”

This metaphor clearly iNustrates the importance of food in Chinese culture! Chinese food can be roughly divided into the Northern and Southern styles. In general,Northern dishes are oily without being cloying and the flavors of vinegar and garlic tend to be stronger. Food made from wheat also plays an important role in Northern cooking;noodles,ravioli-like dumplings, steamed stuffed buns, fried meat dumplings, and steamed buns are the most common flour-based foods. The cooking styles of Peking,Tianjin, and Shandong are probably the best known styles of Northern Chinese cuisine. An elaborate, stuffed chicken symbolizes the Chinese wish for plenitude and satisfaction. Representative Southern cooking styles include:Sichuan and Hunan cuisine which are famous for their liberal use of chili peppers; the Jiangsu and Zhejiang styles which emphasize freshness and tenderness;and Cantonese foods which tend to be somewhat sweet and full of variety. Rice and rice products such as rice noodles, rice cakes, and rice congas are frequently seen in Southern style cooking. In Chinese cooking, color, aroma, and flavor are of equal importance in the preparation of each dish,in satisfying the gustatory, olfactory, and visual senses.Any entree is a combination of three to five colors, selected from ingredients that are light green, dark green, red, yellow, white, black, or caramel-colored. Usually,a meat and vegetable dish is made from one main ingredient and two to three secondary ingredients of contrasting colors. It is then cooked with the appropriate method, seasonings, and sauces to make an aesthetically attractive dish. The primary methods of preparation include stir-frying,stewing,steaming,deep-frying,flash-frying,and pan-frying. A dish with a fragrant aroma will certainly whet the appetite. Among many others, some ingredients that contribute to a mouth-watering aroma are scallions, fresh ginger root, garlic, chili peppers, wine, star anise, cinnamon stick, pepper, sesame oil,and dried black Chinese mushrooms. Of utmost importance in cooking any dish is preserving the fresh, natural flavor of the ingredients and removing any undesirable fish or game odors. In Western cooking, lemon is often used to remove smells of fish;in Chinese cooking, scallions and ginger serve a similar function. Soy sauce, sugar, vinegar, and other seasonings#39;‘ He add richness to a dish without covering up the natural flavor of the ingredients. A well-prepared dish will be rich for those who like strong flavors, not over-spiced to those who like a blander taste, sweet to those who like a sweet flavor, and hot to those who like a piquancy. A dish that is all of these things to all of these people is a truly successful one在中国的烹饪中,色、香、味在每一道菜单准备过程中都同样重要,因此在味觉、嗅觉以及视觉L给人以满足。 However, color, aroma, and flavor are not the only principles followed in Chinese cooking; nutrition is the first concern. A theory of the“harmonization of foods; can be traced back to the Shang dynasty#39;s scholar Yi Yin. He relates the flue flavors i. e. sweet, sour, bitter, piquant, and salty to the nutritional needs of the five major organ systems of the body(the heart, liver, spleen, lungs, and kidneys),and he stresses their role in maintaining good physical health. In fad, many of the plants used in Chinese cooking such as scallions, fresh ginger root, garlic, dried lily, and tree fungus have properties of preventing and alleviating various illnesses. The Chinese have a traditional belief that food and medicine share the same origin and that food has a medicinal value. This view can be considered the forerunner of nutritional science in China. According to this theory,a correct proportion of meat to vegetable ingredi- ents should be maintained. One-third of meat-based dishes should be made of vegetable ingredients, and one-third of vegetable dishes should consist of meat. In preparing soups, the quantity of water used should total seven-tenths the volume of the bowl. Basically, the correct ingredient proportions must be adhered to in the preparation of each dish or soup in order to ensure optimal nutritional value. The Chinese have a number of traditional rules and customs associated with eating. For example, food must be eaten while seated. Also a set order of who may be seated first among men, women, old, and young exists. Furthermore, one must eat main courses with chopsticks and soup with a spoon. The Present目前In this cosmopolitan world,Chinese food is available in practically a major and many other cities of the globe.
